About Spelt Bakery

Spelt Bakery is a small-batch artisan bakery on Highgate in the Maori Hill area of Dunedin. Since opening in 2012, it has earned a devoted following for its slow-fermented sourdough breads, pastries, and seasonal baking — all made by hand using traditional methods and quality ingredients.

The bakery takes its name from spelt, one of the ancient grains that features across the range. But the philosophy goes beyond any single ingredient: it's about baking with care, taking the time to develop flavour naturally, and producing bread that tastes the way bread should.

Sourdough Breads

The heart of the bakery. Spelt's sourdough loaves are long-fermented over 24-plus hours, developing deep flavour and a naturally chewy texture. The range includes classic wheat sourdough, spelt loaves, rye, and seasonal variations. Each loaf is shaped and scored by hand before baking in a stone-deck oven.

Pastries & Sweet Baking

From buttery croissants to fruit-filled Danish pastries, the sweet side of Spelt is just as carefully crafted.
